Dark Chocolate Fruit Bark: A Recipe for Anyone Who Loves Chocolate

A recipe for anyone who loves chocolate (and who doesn't!)

I started making these Dark Chocolate Fruit Bark a little more than a month ago. Yes, it has taken me that long to post it here. Sorry! Haha.

These bites are an easy, yummy, and relatively healthy snack when you are craving something sweet. I don’t know about you but for me, that’s often!

The dried cranberries and the dark chocolate are the only items that contain any added sugar. Dark chocolate 70% or higher is rich and delicious.

It has significantly less sugar than milk chocolate and it has antioxidant properties, depending on how it has been processed. Please check out my previous post on dark chocolate bars and review of several different brands. Battle of the Dark Chocolate Bars.

Dark Chocolate Fruit Bark

In this recipe, I used a combination of Theo’s and Lily’s 70 % dark chocolate bars.

Start by spreading a piece of parchment paper over a cookie sheet and setting it aside. I then get all of my add-ins ready by putting each of them into small bowls for easy and quick placement.

Personally, I chose to cut my almonds in half before adding them to the melted chocolate because they are easier to place than a whole almond.

I then start melting my chocolate over a double boiler.

Once the chocolate has melted I spoon a tablespoon or a bit more of the chocolate onto the parchment. I continue to do this until all of the chocolate has been used.

I add the toppings one by one- cranberries, cherries, goji berries, almonds etc.

After placing all of the fruit and nuts on the chocolate rounds I sprinkle them liberally with coconut flakes. Finally, I put the cookie sheet into the refrigerator to let them cool and set. You can begin eating them after two hours of being in the fridge.

They keep for a good long while in the fridge but mine never last long. They get eaten too quickly. ?

How to make a Dark Chocolate Fruit Bark

Ingredients

  • 6-7 ounces 70% Dark chocolate
  • 1/2 cup Unsweetened coconut flakes
  • 1/4 cup Chopped almonds Raw and unsalted
  • 1/4 cup Dried cherries
  • 1/4 cup Dried cranberries
  • 1/4 cup Goji berries
  • 1/4 cup Unsweetened cacao nibs

Instructions

  • Start by spreading a piece of parchment paper over a cookie sheet and setting it aside. Prepare all of the add-ins by putting each of them into small bowls for easy and quick placement. 
  • Melt the chocolate over a double boiler. Once the chocolate has melted, spoon a tablespoon or a bit more of the chocolate onto the parchment. Continue to do this until all of the chocolate has been used.
  • Add the toppings one by one- cranberries, cherries, goji berries, almonds etc. I like to add the coconut last. After each topping has been added put the cookie sheet into the refrigerator and let them cool and set for at least two hours before eating. If not eaten immediately, store in the refrigerator in an airtight container.

The toppings listed in the ingredients are the ones I chose to use because of their taste and health benefits but please use any toppings of your choice.-To keep the recipe on the healthier side, use dried fruit which has no added sugar.
